A recent email from NASA left Shianna Smart, co-owner of Trails End Buffalo Stix in Gull Lake, Saskatchewan, initially skeptical but ultimately excited. The Canadian astronaut Joshua Kutryk has chosen their bison jerky for the upcoming NASA-SpaceX mission to the International Space Station, pending final approval on October 1. This isn’t the first time their product has made its way to space, as Canadian astronaut Chris Hadfield previously enjoyed the Saskatchewan bison jerky sticks while the business was under different ownership.
Smart expressed her surprise and enthusiasm at the opportunity, hoping that the space-bound jerky will showcase its versatility for various purposes such as kids’ lunches, sports snacks, and travel. The jerky underwent a rigorous selection process by both the CSA and NASA before being deemed suitable for space consumption.
According to Natalie Hirsch from the Canadian Space Agency, astronauts are provided with about three-quarters of their food by NASA, while the remaining portion allows for customization, including Canadian options. Preferences of astronauts are taken into consideration during menu planning, ensuring a variety of choices that meet the necessary criteria for space travel.
Certain requirements for space food include an 18-month shelf life, space-friendly packaging, and the absence of crumbs. Jerky products are particularly suitable due to their extended shelf life, which eliminates the need for refrigeration in space conditions.
Local support plays a vital role in the success of small businesses like Trails End Buffalo Stix. Nolan Langer, assistant plant manager at the Saskatchewan Food Industry Development Centre, emphasized the importance of local backing for these businesses to thrive. The facility has been producing jerky for nearly two decades and serves as a crucial resource for small clients in Western Canada.
Canadian products heading to space aren’t limited to bison jerky, as items like maple syrup from Ontario and Quebec, and salmon from the west coast also represent the country’s diverse offerings.
